Eat This: Recipe for the BEST Chicken Tortilla Soup

I have long professed my love for the site allrecipes.com.  If you love to cook like I do then this will quickly become one of your favorites too.  Everything under the sun is found there and with TONS of ratings…so you can really get  feel for whether or not you are going to like something before you make it.  I found this recipe a while back and we LOVE it.  With all this cold weather and rain I LOVE to make some homemade soup.

Recipe:

  • 2 skinless, boneless chicken breasts (I use a costco rotissere chicken..cheap, ymmu and WAY faster!!)
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cumin
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup frozen corn kernels
  • 1 cup chopped onion
  • 1/2 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1 cup chunky salsa (i use pace medium)
  • 8 ounces corn tortilla chips
  • 1/2 cup shredded Monterey Jack cheese
  • My additions: sliced avocado and sour cream on top

    Directions

    1. In a large pot over medium heat, saute the chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, lemon juice and salsa. Reduce heat to low and simmer for about 20 to 30 minutes.
    2. Break up some tortilla chips into individual bowls and pour soup over chips. Top with the Monterey Jack cheese.

    I serve mine with quesadillas too.  A little twist on the tomato soup and grilled cheese.:)  The kids gobble this stuff up!

    You can have this at you house tonight in about 30 minutes…so easy and SO good!!
